Nicola Strawther

National Chair, Hospital Caterers Association

With 27 years’ experience working in the NHS, Nicola brings valuable knowledge, skills and specialist experience of health service catering and nutrition management.

​

Nicola is a key member of the multiple award-winning catering team and NHS Exemplar site at Nottingham University Hospital (NUH).

 

Previously, Nicola was recruited to the NHS Hospital Food Review’s Expert Panel for NHSE, supporting the team on the National Standards for Healthcare Food and Drink.

 

More recently, Nicola is now the National Chair of the Hospital Caterers Association

Strengthening our Food Safety Principles

Philip Shelley

National Lead for Food, NHS England/DoH

As Senior Operational & Policy Manager at NHS England, Philip is the national lead for food.

​

Philip chaired the NHS Food Review, commissioned by the Secretary of State for Health and Social Care after the 2019 Listeria outbreak. He continues to collaborate with the Department of Health & Social Care, having responsibility for the National Standards for Food & Drink in Healthcare.

​

His contributions have earned him the Hospital Catering Association’s Outstanding Service Award (2020), the Public Sector Alliance Chairs Award 2025, the Lifetime Achievement Award for the Public Sector 2025 and the Outstanding Achievement Award at the Food Service Catey’s 2025. 

​

As an ambassador for Love British Food, WRAP’s Guardians of Grub and Sophie’s Legacy, he looks to integrate these principles when working across all healthcare sites.

Food Safety Culture in Hospitals

Fiona Sinclair

Director, Inspectrum Food Safety

Fiona started her career as an Environmental Health Practitioner in London, then during  20+ years with a food safety consultancy developed two great passions – Nando’s (managing their external audits) and the hospital sector - working with private hospitals, contract caterers, NHS Trusts and procurement bodies.   

 

Fiona successfully led projects on behalf of the Food Standards Agency including drafting the Listeriosis Guidance, and updating Safer Food Better Business.   

 

Inspectrum, specialist food safety consultancy and training provider dedicated to healthcare, was founded by Fiona, who fulfils the Authorised Person role for food safety for several Trusts.  Fiona is undertaking a Professional Doctorate with Cardiff Metropolitan University researching food safety culture in hospitals, and is Secretary for HCA Wessex branch.

Listeria, listeriosis and how to minimise risk to patients and trusts

Karin Goodburn

Director General of the Chilled Food Association

Karin Goodburn is a leading expert in chilled food science, microbiology and regulatory affairs. As Director General of the Chilled Food Association and a consultant, she advises government and industry on safety, policy and supply chains.

 

She has led major industry guidelines from farm to fork with UK, EU and global bodies. Karin chairs the Industry Listeria Group, Food & Biocides Industry Group and SPS Certification Working Group. She contributes to European law, including Regulation 2073/2005, authors key guidance, and trains enforcement officers on high-risk food.

Zoe Bridgewater

Food Microbiologist, Micron 2

Zoe joined Micron2 in 2022 to manage the Micron2 STS scheme.

​

She began her career in 2008 in microbiology laboratories servicing the food industry, including both in-house factory labs and contract labs. Zoe then transitioned into food manufacturing in 2013 and held a range of technical roles through to 2022.

Tom Hollands

Innovation and Technical Director, Raynor Foods

Tom Hollands is the Innovation and Technical Director at Raynor Foods, he is also Honorary Fellow of the IFST and previously one of its trustees.

 

Tom is an accomplished Food Scientist who has worked in both government (Food Standards Agency) and the private sector. Tom is a true innovator at heart and has won many national and international accolades, last year he was awarded with the Honorary Fellowship from the Institute of Food Science and Technology (IFST), in recognition for his extraordinary contributions to the IFST and wider food system as a food scientist and innovator.

 

Tom’s innovations are focused on sustainability and meta food systems, their emerging technologies and the fascinating and complex links that join them.

Understanding the psychological impact of allergies and the implications for catering and communication

Dr Fransceca Sawer

Clinical Psychologist

Francesca is a Clinical Psychologist with 15 years’ experience working in the NHS. She is currently a Consultant Clinical Psychologist working in Leeds, having recently made the move North after years of working in London. Previously working at Great Ormond Street Hospital, The Maudsley Hospital,  The Evelina Children’s Hospital and St Bartholomew’s.

​

Whilst Francesca primarily works with children and adolescence navigating tricky times with their mental health and physical health,  it was during her time leading the specialist psychology service in paediatric allergy at The Evelina that she realised a gap in support. While allergies were recognised in medical terms, the psychological impact on children and families was often overlooked.

The more she spoke to families, the more she uncovered the hidden emotional challenges of allergies, which even to her as a clinical psychologist had never been taught as part of her formal training.  Ever since become passionate about raising the awareness of the psychological impact of allergies and making information as readily available as possible; and over the last 6 years she has developed and refined her unique approach to supporting allergy anxiety. The Allergy Anxiety Method which is based on evidence-based ideas but adjusted for the unique challenges of living with allergies and has now helped hundreds of families.

​

Francesca also works closely with allergy charities, including The Sadie Bristow Foundation and Allergy UK and consults with the food and hospitality industry regarding staff and consumer behaviour and the psychological impact of allergies, to make eating safer for those with allergies.

Food Safety in Healthcare – why the fuss and what is the solution?

Lindsay Carter

Head of Food Safety, ISS UK & Ireland

Lindsay heads up the Food Safety Team for ISS UK & Ireland, looking after sites in the Healthcare, Education and Business & Industry Sectors.

 

She is a Chartered Environmental Health Practitioner with a postgraduate diploma in Food Safety, Hygiene and Management.   Lindsay started her career in Local Government as an EHO working for London and Home County Local Authorities for over 12 years.  Prior to joining ISS in 2017 she has also worked for leading food safety consultancies supporting other contract caterers and key high street names. At ISS, Lindsay has driven a strong food safety culture and has developed systems that make food safety compliance easier for busy operators.

Food Hygiene Inspections and Confidence in Management: A Practical Perspective

Diana Tumover

Environmental Health Officer, London Borough of Camden

Diana Tumova is a Food Safety Environmental Health Officer at the London Borough of Camden and a member of the CIEH Food Safety and Port Health Advisory Panels.

 

With a professional and academic background spanning primary food production, food safety and port health, she brings a practical perspective on areas such as food hygiene, food safety, imported food - compliance with legal requirements for inland food businesses and more. Her early experience in fast food and retail continues to shape her grounded, real-world approach.

 

Having moved from industry into the public sector, Diana understands the day-to-day challenges businesses face. Her background in food business operations informs her approach during visits, where she focuses on building rapport and positive relationships, supporting operators and encouraging continuous improvement through clear, relatable, realistic and achievable advice, alongside proportionate and supportive regulatory intervention.
